Weekly Recap

This week has been so busy. Aside from Dr. appointments, field trips, and soccer games we were rear ended while backing out of a parking space at the school so we have had to deal with tons of paperwork and phone calls. I know for a fact I was backing out first, but it is my word against hers so it is being investigated. More than likely we will have to pay for our own repairs. That really stinks because we have a $500 deductible.

On Thursday October 7, with 80 degree weather outside we read "A Snowy Day." Actually over 2 million kids read this same book on this same day. Thursday was Read for the Record Day.  Talon really enjoyed the art project we did, it was a collage of the four seasons. This was our third week in a row attending story time, what a record.

Visit from the Tooth Fairy
Haley lost her two front teeth in the past two weeks. Of course hubby had to give them a little tug. Her permanent teeth are already coming through.
                                                                          

My meat eating, cheeseburger lovin' husband came home from work the other day and said he wanted to try a few meatless dinners. He wants to eat healthier. We are going to try a few  recipes and see how it goes. Friday night we had Mexican Style Kidney Beans and Dirty Rice, it was pretty good  and we were both satisfied afterward. Warning: Never cut jalapenos with your bare hands!  Yesterday we had homemade mac and cheese, it was so delicious.

Kidney beans are an excellent substitute for meat.
Mexican Style Kidney Beans                                                        
1 Bag of Dried Kidney Beans                                                       
4 Jalapenos                                                                                  
1 Can of diced tomatoes                                                              
Cook beans on high in slow cooker for 4 hours                              
Add jalapenos and diced tomatoes                                                 
Cook for 3 more hours                                                                  
  
Homemade Mac and Cheese                                                                                                     
3 cups whole grain elbow noodles
1 block of Heluva sharp cheddar cheese
1 cup sharp cheddar shredded cheese

Boil noodles on stove top.  Mix noodles and Helluva
cheese in casserole dish. Pour shredded cheese over top.
 Bake in oven at 350 for 20 minutes.
