Visit from the Tooth FairyHaley lost her two front teeth in the past two weeks. Of course hubby had to give them a little tug. Her permanent teeth are already coming through.
My meat eating, cheeseburger lovin' husband came home from work the other day and said he wanted to try a few meatless dinners. He wants to eat healthier. We are going to try a few recipes and see how it goes. Friday night we had Mexican Style Kidney Beans and Dirty Rice, it was pretty good and we were both satisfied afterward. Warning: Never cut jalapenos with your bare hands! Yesterday we had homemade mac and cheese, it was so delicious.

| Kidney beans are an excellent substitute for meat. | 
1 Bag of Dried Kidney Beans
4 Jalapenos
1 Can of diced tomatoes
Cook beans on high in slow cooker for 4 hours
Add jalapenos and diced tomatoes
Cook for 3 more hours
Homemade Mac and Cheese
3 cups whole grain elbow noodles
1 block of Heluva sharp cheddar cheese
1 cup sharp cheddar shredded cheese
Boil noodles on stove top. Mix noodles and Helluva
cheese in casserole dish. Pour shredded cheese over top.
Bake in oven at 350 for 20 minutes.
